An urban farm with a clear focus

Gubaria is dedicated to one species. This lets us follow each batch closely and offer fresh lion’s mane under continuous supervision.

Fresh lion’s mane at the Gubaria farm
Hericium erinaceus · small batches

Daily care

We observe, rather than rush

Lion’s mane responds to air, humidity and temperature. We monitor the growing room every day and harvest only when its structure has developed but is still tender.

Working in small batches lets us give each block attention and avoid keeping harvested mushrooms longer than necessary.

From mycelium to the finished pack

Our working rhythm

01

Preparation

We select clean substrate and prepare each batch separately.

02

Colonisation

Lion’s mane mycelium develops steadily in stable, clean conditions.

03

Fruiting

We adjust fresh air, moisture and light to meet the needs of lion’s mane.

04

Hand harvesting

We harvest and pack according to the season, using cooling only in warmer months.

Our principles

Less noise.
More freshness.
