INGREDIENTS FOR 2 SERVINGS

  • 400 g large fresh lion’s mane
  • 1 1/2 tbsp olive oil
  • 20 g butter
  • 1 garlic clove
  • 2 sprigs thyme or rosemary
  • 1/2 tsp salt
  • black pepper
  • 1/2 lemon

METHOD

  1. 01

    SLICE

Clean the mushroom and cut into thick slices of 3–4 cm. Dry all sides with kitchen paper.

  2. 02

    FIRST SIDE

Heat a heavy frying pan with the olive oil over medium-high heat. Arrange the steaks in a single layer and place a second clean pan or a spatula on top. Press gently, without flattening them heavily, for 3–4 minutes. Work in batches for larger quantities.

  3. 03

    TURN

Turn, add another drop of oil if needed, and repeat the gentle pressing for another 3–4 minutes.

  4. 04

    AROMATICS

Reduce the heat. Add the butter, crushed garlic and herbs. Baste the steaks with melted butter for 1–2 minutes.

  5. 05

    SERVE

Season with salt, black pepper and lemon juice. Rest the steaks for 2 minutes before serving.
